Jersey Royal Potatoes by chef natasha

  • 500g Jersey Royal potatoes (or new potatoes)

    Handful of drained capers (chopped)

    ½ a lemon juiced

    4 tbs of olive oil

    Small bunch of flat leaf parsley (chopped). Other great herbs to add if desired: tarragon, dill, chives.

    Salt & pepper to taste

  • Scrub the potatoes with a clean sponge under running water, some of the skin will peel off, but no need to peel them or try and scrape all the skin off.

    Steam the potatoes for about 10 minutes until fully cooked.

    Meanwhile, mix all the other ingredients (capers, olive oil, herbs, lemon juice) in a bowl to form the dressing.

    Cut in half or quarter any large potatoes.

    Add the potatoes, while warm, to the bowl with dressing.

    Season with salt and pepper and serve warm as a side, or it is also great cold as a salad.
