JANUARY NOURISHMENT
VEGAN JIAOZI DUMPLINGS

Serves: 4 - 6 people (approximately 20 - 24 dumplings, depending on size)
Ingredients:
For the Dough:
2 cups all-purpose flour
3/4 cup warm water
Pinch of salt
For the Filling:
1 cup cabbage, finely chopped
1/2 cup mushrooms, finely chopped
1/2 cup carrots, grated
2 green onions, finely chopped
1 tablespoon fresh ginger, minced
1 tablespoon soy sauce
1 tablespoon sesame oil
For Cooking:
2 tablespoons vegetable oil
1/4 cup water

Make the Dough: In a bowl, mix the flour and salt. Slowly add warm water, stirring until a dough forms. Knead for 5 minutes until smooth. Cover with a towel and let rest for 20 minutes while you prepare the filling.
Prepare the Filling: Combine cabbage, mushrooms, carrots, green onions, ginger, soy sauce, and sesame oil in a bowl.
Roll Out the Dough: Divide the dough into small balls (about the size of a ping pong ball). Roll each ball into a thin circle, about 3 inches wide.
Fill the Dumplings: Place a spoonful of filling in the center of each dough circle. Fold the dough over and seal the edges by pressing them together.
Cook the Dumplings: Heat 1 tablespoon of oil in a skillet over medium heat. Place dumplings in the skillet and cook until the bottoms are golden brown, about 2 minutes. Add 1/4 cup water, cover, and steam for 5 minutes.
Serve: Serve hot with soy sauce or your favorite dipping sauce and enjoy ๐งก
