OCTOBER NOURISHMENT
SUNDAY SPELT PANCAKES BY CHEF NATASHA

150g spelt flour
1 tsp baking powder
¾ tsp bicarbonate of soda
1 large egg, beaten (or use an egg replacer)
150ml milk (regular or plant based)
1 tsp vanilla extract or paste
1 ripe banana
Pinch of salt1-2 tbs of oil or butter for cooking (rapeseed, coconut, butter, vegan butters, your choice)

Bowl method:
1. Mash the banana as much as possible.
2. Add the rest of the wet ingredients (egg, milk, vanilla) and mix it until smooth.
3. In another bowl whisk together the spelt flour, baking powder, baking soda, and salt.
4. Add the dry ingredients to the wet and whisk until incorporated.
5. Heat a non stick pan on medium-high and add your chosen oil or butter for cooking.
6. Cook the pancakes and serve with your favourite pancake toppings.Blender method:
1. Add the banana, egg, milk, vanilla, and salt and blend until smooth.
2. Add the flour, baking soda, and baking powder and gently blend until incorporated.You will probably have to scrape the sides of the blender with a spatula and blend again.
3. Heat a non stick pan on medium-high and add your chosen oil or butter for cooking.
4. Cook the pancakes and serve with your favourite pancake toppings.Tips & Notes
This recipe calls for spelt flour, but you can also substitute with whole meal, plain flour, and gluten free flours. With some flours you might need to add an extra splash of milk if the batter seems to thick.
If using buckwheat flour only use 25g of buckwheat and 125g of another flour, as buckwheat can be overpowering.
Try adding to the batter: chocolate chips, blueberries, slices of banana, granola, or chia seeds.
Topping ideas for the pancakes: fresh berries, maple syrup, sliced bananas, yogurt, fruit compotes.Note: there is no sugar in this recipe and you will find that the sweetness of the banana is enough.
Note: You always cook the first side of a pancake the longest, so make sure it doesn’t burn and lower the heat if needed. Once you see air bubbles forming it means it is a good time to flip. The second side should only need 30-60 seconds to cook after you flipped it.
