Roast Potato chips with lime by chef bibo from ikoyi

For the Roasted Potato Chips:
4 medium potatoes, thinly sliced
2 tablespoons olive oil
Salt, to taste
For the Lime Peanut Butter Dressing:
2 tablespoons peanut butter
2 tablespoons olive oil
Juice of 1 lime
1 tablespoon honey
1 tablespoon fresh parsley, finely chopped
Salt, to taste

Preheat your oven to 220°C (428°F).
Wash and peel the potatoes if desired.
Using a mandoline or a sharp knife, thinly slice the potatoes evenly.
Place the potato slices in a large bowl and drizzle with olive oil.
Arrange the slices in a single layer on a baking sheet lined with parchment paper and sprinkle salt.
Roast in the preheated oven for 20-25 minutes, or until the potatoes are golden and crispy.
Turn the slices halfway through the baking time to ensure even crisping.
In a small bowl, combine the peanut butter, olive oil, lime juice, honey, parsley, and salt.
Whisk until smooth and well combined. Adjust the seasoning to taste.
Once the potato chips are roasted remove them from the oven and let them cool slightly.
Drizzle the lime peanut butter dressing over the warm chips or serve it on the side as a dipping sauce.
